Menu: March 1-7

Tuesday: ground beef taco salads
Thursday: Scrambled egg and sausage stromboli
Friday: out to eat
Saturday: bacon, eggs, and homemade biscuits
Sunday: quesadillas
Monday: chicken parmesan, herbed pasta, and steamed broccoli

Black Bean and Corn Salad

1 can black beans, drained and rinsed
2 cups corn (frozen or drained canned)
1 tomato, diced
1/2 cup chopped red onion
1 1/2 teaspoons ground cumin
2 teaspoons hot sauce
juice of 1 lime
2 tablespoons olive oil
salt and pepper

Combine all ingredients in a bowl. Chill in fridge. Can eat it immediately, but it is much much better if it sits in the fridge overnight.

Wednesday: BLTs and mixed veggies
Thursday: spicy roasted chicken legs, steamed broccoli, and au gratin potatoes
Friday: Shrimp tacos with mango salsa and black bean and corn salad
Saturday: Out to eat
Sunday: spaghetti squash, hardest red sauce ever, and meatballs
Monday: ground beef stroganoff over egg noodles and peas

Tuesday: lettuce wraps and sautéed zucchini
Saturday: Out to eat
Sunday: spiced beef kabobs, grilled squash, and sweet potato fries
Monday: BBQ Chicken Pizza
Tuesday: pineapple pork chops, smashed potatoes, and green beans

Menu: Feb 8-14

Tuesday: chili-glazed pork with sweet potato hash (Thought this was fantastic! Can't wait to make it again. :))
Thursday: easy baked tilapia and steamed rice
Friday, Saturday: will be making veggie burgers since DH will be out of town. :D
Sunday: lettuce wraps and sautéed zucchini
Monday: To Die For fettuccine alfredo w/ Cajun chicken, shrimp, and broccoli
