1 medium apple chopped
½ c. butter, softened
½ c. brown sugar
½ c. granulated sugar
½ tsp. vanilla extract
1 egg
1 c. all purpose flour
½ tsp. baking powder
¼ tsp salt
1-1/2 c quick cooking oats
Heat oven to 350F. Lightly spray cookie sheet with vegetable pan spray. In a large bowl, cream butter with both sugars. Add vanilla and egg; blend well. Stir in flour, baking powder, salt, and oats; mix well. Stir in apples. Spray a 1 oz. cookie scoop or tablespoon with vegetable pan spray and drop dough on prepared pans. Bake 15-18 minutes or until edges are light golden brown.
Makes: 2 dozen cookies

I used this recipe, but added some cinnamon. I then baked it in an 8x8 baking dish for double the time. Cut into bars and wrapped each individually. Made for soft, chewy bars that tasted divine! Works great for snacks. Next time I'll decrease the sugar a bit (it's rather sweet) and bake in a slightly larger pan though the recipe does work great as is.

I am so glad I found your website as I hav been struggling with my 2 1/2 year old twins and I tried this recipe today and did the bar format with the sugars cut back to 1/3 cup and added 1/4 tsp of cinnamon and the boys (including dad) love them. They are delicious! Thank you for the great recipe!
I forgot to mention that I used a glass pan that was 8 x 11.5 and let it go for 30 minutes and they turned out nice.
These are in the oven right now. I decided to do as Anonymous suggested. I added cinnamon and put it in an 11"x8" glass dish. I'm going to check it in 20 minutes. I'll be sure to come back and tell you how they turned out (and if my 2 year old liked them).
Well, they taste great, but they fell apart. I think it needs one more egg or some peanut butter to hold it together. I'm going to retry the recipe later and make cookies before I try to tweak the recipe, though.
